Easy Root Beer Float Cupcakes

These root beer float cupcakes are unique, rich, moist, and very delicious! Plus they are so beautiful and fun, which makes them ideal for different parties and other special occasions. They are very simple and easy to prepare and your husband will definitely love them! Here is the recipe:

Easy Root Beer Float Cupcakes Recipe

Serving 24 cupcakes

Ingredients:

For the cupcakes:

  • 1 vanilla cake mix
  • 3 eggs
  • ½ cup vegetable oil
  • 1 tablespoon root beer extract
  • 1 cup root beer

For the frosting:

  • 1 cup softened butter
  • 4-5 cups confectioners’ sugar
  • 1 tablespoon root beer extract
  • 3-4 tablespoons root beer

For decoration:

  • Cherries (optional)
  • Little straws (optional)

 

Instructions:

To make the cupcakes:

  • Preheat oven to 375°F/190°C/Gas Mark 5. Using paper liners, line a cupcake pan.
  • In a mixing bowl, combine together vanilla cake mix with the eggs, root beer, oil, and extract, until well incorporated. Spoon mixture into each paper liner, filling around 2/3 full.
  • Place in the oven and bake for 15 to 18 minutes. Remove and cool completely.

To make the frosting:

  • Using an electric mixer, whisk together all ingredients until smooth and pipe onto the cupcakes. Refrigerate for 15 minutes to set.
  • To decorate, add a cherry on top and apply a straw (if desired). Serve.
